Ingredients
- 2 large russet potatoes, peeled and cut into 1/2-inch thick fries
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C). In a large bowl, toss the potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. Meanwhile, heat 1/4 cup of olive oil in a small skillet over medium heat. Add the minced garlic and cook for 1 minute, until fragrant. Stir in the chopped parsley and remove from heat. Once the fries are cooked, transfer them to a bowl and toss gently with the garlic-parsley mixture. Serve immediately.
