Ingredients
- 1.5 kg whole chicken, cut into 8 pieces
- 2 tbsp olive oil
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and freshly ground black pepper
- For the chili-lime sauce:
- 1/2 cup chopped cilantro
- 1/4 cup chopped green onions
- 2-4 Thai chilies, finely chopped (adjust to taste)
- 1/4 cup lime juice
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 tbsp sesame oil
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, combine olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Add chicken pieces and toss to coat thoroughly.
- Grill the chicken for about 6-8 minutes per side, or until cooked through and slightly charred.
- While the chicken is grilling, prepare the chili-lime sauce. Combine all the ingredients in a bowl and mix well.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- Drizzle the chili-lime sauce generously over the chicken pieces. Serve immediately.
