Ingredients
- • 1 tablespoon vegetable oil
- • 1/2 pound pork shoulder, thinly sliced
- • 1/2 cup kimchi, chopped
- • 1/2 cup onion, chopped
- • 2 cloves garlic, minced
- • 1 cup kimchi juice
- • 4 cups water
- • 1 tablespoon soy sauce
- • 1 teaspoon gochujang (Korean chili paste)
- • 1/2 teaspoon gochugaru (Korean chili flakes)
- • 1/4 teaspoon black pepper
- • 1 teaspoon sugar
- • 1 cup silken tofu, cubed
- • 1/4 cup green onions, chopped
- • Cooked rice, for serving
Instructions
- Heat the oil in a large pot over medium heat. Add the pork and cook until browned.
- Add the kimchi, onion, and garlic and cook until softened.
- Stir in the kimchi juice, water, soy sauce, gochujang, gochugaru, pepper, and sugar. Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in the tofu and green onions. Simmer for 5 minutes more. Serve hot with rice.
