Ingredients
- 1 cup bulgur wheat
- 1 bunch of fresh parsley, chopped
- 1/2 cup chopped tomatoes
- 1/4 cup chopped mint leaves
- 1/4 cup finely chopped red onion
- 1/4 cup lemon juice
- 1/4 cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse the bulgur wheat in a fine-mesh sieve until the water runs clear. Place the bulgur in a bowl and cover with cold water. Let it sit for about 30 minutes, or until it is tender but still slightly firm.
- While the bulgur is soaking, finely chop the parsley, tomatoes, mint leaves, and red onion.
- Once the bulgur is ready, drain any excess water. Add the parsley, tomatoes, mint, and red onion to the bulgur.
- In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the bulgur mixture and gently toss to combine. Adjust the seasoning to your taste.
- Let the tabbouleh sit for at least 30 minutes to allow the flavors to meld. Serve chilled.
