Ingredients
  • For the filling:
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 cup green peas
  • 1/2 cup potatoes, boiled and cubed
  • 1/4 cup chopped cilantro
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/4 tsp red chili powder
  • Salt to taste
  • Oil for frying
  • For the dough:
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup water (approx.)
  • Oil for greasing
Instructions
  1. Prepare the filling: Heat oil in a pan, add onion and sauté until golden brown. Add garlic and ginger and sauté for a minute. Add green peas, potatoes, cilantro, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for 5-7 minutes until the filling is slightly dry.
  2. Prepare the dough: In a large bowl, mix together flour and salt. Gradually add water and knead to form a soft dough. Add a little more water if needed. Cover the dough and let it rest for at least 30 minutes.
  3. Assemble the samosas: Roll out the dough into a thin circle. Cut the circle into triangles. Fill each triangle with a spoonful of the prepared vegetable filling. Fold the triangles into samosa shapes. Seal the edges tightly.
  4. Fry the samosas: Heat oil in a deep frying pan or kadai. Fry the samosas in batches until they are golden brown and crispy. Drain the excess oil on a paper towel.
  5. Serve hot with your favorite chutney.
